My mom is an excellent baker and growing up she always whipping up some sort of fresh bread or cakes or pies in the oven. She still does, in fact! This is her signature fall recipe for pumpkin bread. It is so simple even I can make it! It makes a wonderful gift or contribution to a fall school bake sale. Bonus points for this recipe as it also fills your home with the wonderful smell of pumpkin and spices such as ginger and cloves.
Scrumptious and Easy Pumpkin Bread Recipe
3 1/2 cups sifted flour
3 cups sugar
2 tsp baking soda
1 tsp salt
3 tsp cinnamon
1 tsp nutmeg
1/2 tsp cloves
1/4 tsp ginger (I like to add more)
4 eggs
1/2 cup water
1 cup vegetable oil
2 cups canned pumpkin
If you like to add in “goodies” to your bread, you can add 1 cup of walnuts or raisins or even cranberries.
Mix eggs, sugar, pumpkin with a hand mixer– then alternate flour, seasonings, oil and water – add nuts, raisins, cranberries.
This recipe makes three to four small loaves (which are perfect for gift giving) or two large. Spray bread pans well with no-stick spray and bake for 350 degrees for about l hour.
My girls LOVE this bread and it’s delicious warm with butter on a pretty fall plate.
