Piña Colada Popsicles


Welcome to the first post in my summer blogcation series! I’m so excited to introduce ya’ll to some great Nashville area bloggers over the next two weeks. Today’s post is from my friend and co-worker Leah who has a fantastic food blog, So, How’s It Taste? Enjoy! And let me know if you make these!

It took me probably less than a second to say yes when Jamie asked if I could do a guest post on her blog. She’s been a blogger a lot longer than I have, and I’ve turned to her numerous times for advice. We’ve been coworkers for years, but our friendship has grown even more thanks to blogging.

When thinking of a recipe to share, I knew I wanted something that was kid-friendly, but could be jazzed up for adults. My mom used to make virgin piña coladas from those mixers you find in the freezer and I thought it was the coolest thing in the world. I felt like such a grown-up. Fast forward to present day, where we still enjoy those drinks, kicked up with rum!

These popsicles taste just like piña coladas on a stick. Perfect for summer. Sweet coconut, tangy pineapple, and a cherry on top. I love how the chunks of real fruit and coconut inside create a nice variety of texture and a unique look. The coconut floats to the top of the mold and gives a cool rimmed effect. You won’t find these popsicles on any shelf in your grocer’s freezer. Leave out the rum to make it kid-friendly. If you don’t have popsicle molds, you can easily make these using small paper cups. All that’s missing is the umbrella!

Piña Colada Popsicles
Makes six 4-ounce popsicles

3 tbsp. shredded sweetened coconut
1 cup pineapple juice
3/4 cup coconut water
1/2 tsp. pure vanilla extract
2 tbsp. sugar
2 tbsp. light rum (optional)
6 maraschino cherries from a jar, stemless
6 bite-sized fresh pineapple chunks (about 1/2 cup)

1. Preheat an oven or toaster oven to 350F. Spread the coconut on a baking sheet and toast for about 6 minutes. Watch carefully as it can burn quickly. Let cool.

2. Put the pineapple juice, coconut water, vanilla, sugar, and rum, if using, in a blender. Process until smooth.

3. Divide the chunks of pineapple and cherries among your popsicle molds. Spoon about 1/2 tablespoon of the toasted coconut into each mold, on top of the fruit.

4. Pour the juice mixture into popsicle molds. Insert the sticks. Freeze for at least 12 hours.

5. Remove from the freezer and let stand for 5 minutes, or run under hot water, to remove popsicles from the molds.

As a blogger I love it when you have the chance to step outside the draft post box on your computer and actually meet REAL LIFE bloggers in REAL LIFE color HD.

The hilarious blogger Bossy herself (Georgia Getz) made Nashville a stop on her spring No Book Tour and several of us got together Saturday night at Bosco’s in Hillsboro Village here in Nashville. Bossy is incredibly nice and down to earth. She also has amazing long-arm snap a picture of herself with her peeps skills, not to mention an obsession with buying URLS (me, too!)

I may or may not have cracked myself for going into Bosco’s and making reservations under the name…The Bossy Table.

The Bossy Table also included THE Mrs. Fussypants Alli Worthington of Blissfully Domestic fame but she had to leave early. I think she needed to tend to her action figure doll. What? You don’t have your own action figure doll?

Earlier that evening Bossy went with her new Nashville blogger BFFs Tori and Rebecca and Bossy reader Kat, and by Bossy reader I mean reader of Bossy and not someone prone to bossiness, to the Ryman to see Prairie Home Companion and she fell in love with the Ryman, like most people do, and the karma one feels enveloped in when you think of all the talent that has amassed in that great building. It’s kind of like a crazy quilt of emotion and appreciation and inspiration sprinkled with the occasional DAYUM these old wooden seats are unfortunately akin to really uncomfortable church pews. Not to mention you might feel the ghosts of beer swillin’ backstage honkey tonkin’ vibe past whooshing by.

I think Bossy needs to return to Nashville when she is not on this whirlwind tour with Harrison Ford as her sidekick (note: see Bossy’s blog to see if I mean THE Harrison Ford or perhaps, you know, I’m joking) so she can do downtown right and maybe hit some other Nashville must dos. And maybe do some beer swillin’!

Netflix Holiday House: I Just May Move In

Shopping, movies, hot cocoa? I’m there.

Netflix asked me to help spread the word about a fun event tomorrow at Opry Mills which would be a nice break from holiday shopping.

I’m especially excited because I’m taking the day off from work to spend time with Miss A who has a special Christmas field trip to Chaffin’s Barn Dinner Theatre. Before the play we’re heading to Opry Mills to stop by Netflix’s Watch Instantly Holiday House in the food court. There’s going to be a family room, a child’s bedroom, a teen’s hideaway, a media room, and a kitchen where shoppers can kick back and check out the many ways they can watch their favorite TV shows and movies streamed from Netflix. Honestly if they threw in wine and streaming episodes of Mad Men I might be tempted to just move in until the end of the year….but my family would eventually miss me. I hope.

The Netflix Watch Instantly Holiday House will be set up with all the comforts of home: couches, recliners, and beanbags and hot cocoa, cookies, and popcorn will be served.  Each “room” will be equipped with Netflix-ready devices such as the X-Box 360, PlayStation, TiVO HD DVR, Roku Digital Video Player, and LG Network Blu-ray player. There will be several people on hand to help shoppers test the new Netflix Watch Instantly service, which allows members to instantly watch unlimited movies and TV episodes streamed to their TVs and computers.

Netflix has offered a fun prize pack, which includes autographed CDs from Julianne Hough and Jennifer Hudson, slippers, and a messenger bag, for a Blonde Mom Blog reader.
