Good And Good For You Challenge: Pork Quesadillas And A Great Giveaway

It’s the final week of my Good and Good For You Challenge and pork and me…we’re like this.


Have you been following along with my adventures in pork? I’ve tried three great new recipes so far during this healthy cooking challenge through Publix and the Pork Board:

This week’s lean cut of pork on sale at Publix is Pork Sirloin Cutlets and I made Pork and Mushroom Quesadillas to go with the theme of Healthy Comfort Food Dinners. Yes comfort food CAN be healthy! Woot! We had leftover mushrooms from pizza night on hand, as well as flour tortillas, and my entire family loves Tex/Mex food so I knew this would be a hit!  I used Gruyere cheese and the flavor was amazing. This is definitely a keeper recipe!

Pork And Mushroom Quesadillas

Ingredients

12 ounces pork cutlets, pounded 1/4-inch thick (I bought thin ones, not pounding required)
1/4 cup olive oil with garlic, OR olive oil, divided
salt , to taste
6 ounces fresh mushrooms, sliced
1/3 cup green onions, sliced
8 ounces Swiss cheese, OR Gruyere cheese, shredded (2 cups)
4 large flour tortillas, (9-to 10-inch)
Directions

Stack cutlets and cut crosswise in half, then cut each stack lengthwise into matchstick-size pieces.
Heat 1 tablespoon oil in 12-inch nonstick skillet over high heat; stir-fry pork for 2 minutes or until no longer pink.
Remove pork from skillet with slotted spoon.
Season to taste with salt.
Add 1 tablespoon oil to skillet.
Add mushrooms and onions to skillet; stir-fry for 1-2 minutes or until crisp-tender.
Remove from skillet.
Wipe skillet with paper towels.
To assemble, sprinkle 1/4 cup cheese over half of each tortilla.
Top each with pork and mushroom mixture.
Sprinkle each with 1/4 cup of remaining cheese.
Fold tortillas in half; pressing gently.
Add 1 tablespoon oil to skillet.
Cook quesadillas, 2 at a time, over medium heat for 2-4 minutes or until golden and cheese is melted, turning once.
Remove quesadillas from skillet; loosely cover with foil to keep warm.
Repeat with remaining 1 tablespoon oil and quesadillas.
Cut quesadillas into wedges to serve.
Serves 4.

Prep Time: 15 minutes
Cook Time: 10 minutes

It’s Gettin’ Hot (OK, OK Warm) In Here Vicks Germ Free Warm Mist Humidifier Giveaway

Forget Diamonds, Great Jeans Are A Girl’s BFF

I am a jeans girl. I practically live in jeans. Because my office has a casual dress code I even wear jeans to work.

See? (Ignore my bag lady, heavy laden with stuff so I’m taking the elevator and not the stairs motif.) Also if you take a picture in a dark elevator? Instant sepia tone!

  


Shine from Yahoo! invited me recently to be a Yahoo! Get It Guide Insider and when I saw that this week’s Yahoo! Shine Get It Guide topic was all about jeans I knew I had to chime in. I get the scoop on what Shine from Yahoo! readers and Get It Guide Gurus are talking about on everything from food to fashion to finance and career and will occasionally weigh in on these topics AND get your opinion. Plus I will always try to throw in something fun for ya’ll so (hint hint) there is a little giveaway at the end of this post. Tis the season. I’ll be back to writing about dog hair and kid antics and warming up metal bleachers for hours during winter indoor soccer games very soon.

Because I’m short (not even 5 ft. 2) I usually must try on about 8 million pairs of jeans before I find THE ONE. I will never be described as leggy or lanky and although I have long since come to terms with my non-Heidi Klum gams, two c-sections and 10 years have added some extra junk in my trunk since my pre-mom days when I was in my early 30s.

What kind of jeans do I like? Honestly the ones that fit best. The ones that don’t need hemming and don’t gap in the back. The ones that make me do a little happy dance in the dressing room.

I love dark denim with not a lot of stitching and I love slender cuts with a bit of stretch to the fabric. I’ve even recently ventured into the land of skinny jeans this year although with some trepidation. I will, however, NEVER wear pajama jeans no matter how much my girls comment about how comfortable they look although by Thanksgiving night pajama jeans sounded mighty fine. Mighty fine.

My current favorite go to pair of jeans are a pair of dark wash skinny jeans in petite length from Lee. They are priced reasonably for my God Help Me Do I Need To Write One More Check Mom Budget, they look great with everything from ballet flats and a t-shirt to boots with a cute swingy cardigan. Nothing is a better wardrobe staple than a fantastic pair of jeans and nothing makes you feel better than finding that perfect pair of jeans. They’re like the BFF of fashion.
