Cheerios Parfait Pineapple Pistachio

This summer is my teenage daughter’s last summer before officially becoming a high schooler! It seems like just yesterday we were going shopping for kindergarten supplies.

Some things never change, even as your kids grow up. Since my girls were toddlers they have loved Cheerios™. Cheerios™ have always been the perfect breakfast as well as on the go snack. I always carried them in my diaper bag when they were just starting to enjoy solid foods as they were the perfect portable snack.

Between band camp, cheer clinics and babysitting gigs, both my 11-year-old and 14-year-old have been on the go all summer break. In fact some weeks it doesn’t seem like much of a “break” at all! They’re both at the age where they typically make their own breakfast in the morning. Honey Nut Cheerios™ are a perennial favorite at my house and always a go to in the pantry, whether they have a bowl topped with fresh blueberries and strawberries for breakfast or make a bowl in the afternoon as a snack (Netflix binge watching can be exhausting ya’ll!) We love all the varieties, especially Fruity Cheerios™ and Chocolate Cheerios™!

We came up with a yummy Honey Nut Cheerios™ Pistachio and Pineapple Parfait snack that is a perfect breakfast idea, an afternoon snack or even a light dessert when you want something sweet but light. My 11-year-old really loves getting creative in the kitchen and wanted to use pineapple as our “inspirational” fruit since she and her two best friends are running a booth at our local farmer’s market selling bath products and the name of their small business is “Pure Pineapple.”Walmart has all our favorite varieties of Cheerios™ on sale this summer and you can find savings coupons online here so you can stock up for your family the next time you hit the cereal aisle.

#SummerofCheerios Recipe: Pistachio and Pineapple Parfait


Vanilla yogurt

Honey Nut Cheerios™

Fresh diced pineapple (or canned but fresh is best!)

Crushed pistachios as a garnish on top

In a parfait glass jar or mason jar alternate layers of honey nut cheerios, vanilla yogurt, and fresh diced pineapple and top with crushed pistachios.

Enjoy for breakfast, an afternoon snack or as midnight Netflix fuel!
